Overview

Overview and key benefits.

A practical summary for procurement, R&D and QA teams comparing application fit, format and processing requirements.

Date sugar, also called date powder, is made by drying and milling date flesh. It offers a way to introduce date character in a dry format when date paste or date syrup would change the mixing process.

Country of origin: Iran. 100% natural, with no additives.

How it’s made

Date powder, also known as dry date sugar, is made by drying pitted date flesh and milling it into a fine powder. It contains the ground fruit material, making it different from sugar extracted into a liquid or isolated as crystals.

A fine, dry format brings date sweetness and fruit character to bakery blends, snack coatings and powdered recipe mixtures.

Application notes

Where it fits

01

Consider dry bakery blends, biscuit recipes, cereal clusters and finishing dusts. Choose a particle size that suits the desired appearance and mouthfeel.

Technical notes

What to evaluate

01

Review the full ingredient declaration, moisture, flowability and tendency to clump. Trial dispersion in the actual recipe; finely milled fruit is not the same as a fully soluble sugar.

Application notes

Plan the dry-mix trial

Choose where it enters

Decide whether the powder belongs in the main dry blend, a coating or a finishing layer. Keep that addition stage fixed in the first comparison so you can judge its contribution without changing the whole mixing sequence.

Look at distribution

Compare the blend before processing and the finished biscuit, cereal piece or topping. Record whether the visible particles and date flavour are evenly distributed or intentionally concentrated in a layer.

Include the transfer step

Test the proposed pack-to-mixer route, including weighing and a representative holding period. Record any handling issue separately from the recipe result, so purchasing and development can review the same sample for different needs.

Questions

Ingredient questions

Is date sugar the same as date powder?

For this ingredient, yes. Both names refer to dried, milled date flesh. It is different from date seed coffee, which is made from the kernels.

Will date powder dissolve like white sugar?

Date flesh contains insoluble material as well as sugars. A recipe can retain fruit particles, so check dispersion and texture before using it in a clear drink or fine coating.

Can date sugar replace white sugar at the same weight?

Treat the change as a formulation trial. Date sugar adds date flavour, colour and fruit material as well as sweetness. Compare the finished product’s texture and handling before setting the inclusion rate.
