Overview

Overview and key benefits.

A practical summary for procurement, R&D and QA teams comparing application fit, format and processing requirements.

Our cold-pressed date paste brings the character of date flesh into a versatile fruit ingredient. Its naturally sweet flavour and cohesive texture offer a starting point for fruit-and-nut bars, filled biscuits, pastry centres and date-led sauces.

Use it where the fruit should contribute to both flavour and body. It pairs naturally with nuts, cocoa, warm spices and other fruit ingredients, allowing the recipe to move from a simple date filling to a more layered snack or dessert. The final texture is shaped by the whole recipe and the way it is mixed, formed or baked.

Country of origin: Iran. 100% natural, with no additives.

Technical notes

How it’s made

Pitted dates are mechanically worked and cold-pressed into a cohesive paste. The flesh remains part of the ingredient, providing fruit body as well as sweetness. This produces a format suited to mixing, shaping and filling.

Cohesive fruit body and mellow date sweetness suit filled biscuits, fruit bars and pastry centres, especially alongside nuts or cocoa.

01

Compare texture, moisture and particle size on the proposed grade. Check portioning, bake behaviour and moisture migration in the complete recipe through its intended shelf life.

Application notes

Design the date component

A fruit-and-nut centre

Build a simple centre around the paste, then vary one inclusion at a time: chopped nuts, cereal pieces or cocoa. Compare the cut surface and bite as well as the flavour, so the chosen recipe has a clear texture direction.

A distinct bakery filling

Decide how much of each bite should be filling and how much should be dough. Keep the portion shape and filling weight consistent across trials, then inspect the cooled cross-section for the balance you intended.

A spoonable recipe

For a spread or dessert layer, set a serving reference: spread on bread, spooned from a pot or layered with another component. Assess the complete recipe in that format, including how neatly it portions and how its date flavour meets the other ingredients.

Questions

Ingredient questions

Can date paste replace sugar directly?

It changes more than sweetness: the recipe also receives fruit solids and moisture. Develop the substitution in a trial recipe and evaluate texture, flavour and handling together.

When should I choose date paste instead of date powder or syrup?

Consider paste when date flesh needs to contribute body to a filling or formed snack. Date sugar (date powder) provides a dry ingredient format, while date syrup provides liquid sweetness and date flavour. Trial the format in your actual mixing and forming process.

How is the date paste packed for bulk supply?

The listed pack options are 5 kg and 10 kg food-grade plastic bags in corrugated cartons. Include your preferred pack size and required quantity in the enquiry.
